Generally great. Perhaps a little long.
Some multiple choices rather vague. Incorrect cooking does increase risk of food poisoning, but only through increasing bacterial growth. "Everyone in the company" could be prosecuted but surely, only if they were involved.

Good but so much to take in
A great deal of information to assimilate for the type of catering we provide ie lunch on a monthly basis.
