Legally, you must make sure that the food you serve is prepared in a clean kitchen that is free of pathogens. This is mandatory to protect your customer’s health, you and your workplace’s reputation, and to assure your quality of food.
Under the HACCP (Hazard Analysis and Critical Control Points) system, you have a legal duty to set in place a Food Safety Management System. Having a cleaning schedule is a simple way of complying with your legal duties.
A cleaning schedule increases your levels of accountability and can act as evidence of due diligence when an Environmental Health Officer comes to visit your workplace. It can also be used to improve your hygiene levels and ensures that cleaning on your premises remains consistent.
What is a Cleaning Schedule?
A cleaning schedule describes exactly what needs to be cleaned, when that object needs to be cleaned, and how it is to be cleaned. It also details who should be cleaning each particular object.
In theory: The more detailed your cleaning schedule, the more efficient it should be. Specific details, such as staff signature and date, add to the evidence of your compliance with current regulations. This will help keep you in the good books of the Environmental Health officer.
Some More Benefits of a Cleaning Schedule
- Offers you a consistent level of hygiene control
- Reduces the risk of any food contamination and food poisoning.
- Improves your company’s hygiene standards.
- Evidence of due diligence for the Environmental Health Officer.
- Helps your company identify potential pest problems.
- Identifies removable materials where pests could live.
- Creates a clean working environment for your staff.
